Barbecue Pulled Chicken
Ingredients
- 1 8-ounce can reduced-sodium tomato sauce
- 1 4-ounce can chopped green chiles, drained
- 3 tablespoons cider vinegar
- 2 tablespoons honey
- 1 tablespoon sweet or smoked paprika
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dry mustard
- 1 teaspoon ground chipotle chile
- 1/2 teaspoon salt
- 2 1/2 pounds boneless, skinless chicken thighs, trimmed of fat
- 1 small onion, finely chopped
- 1 clove garlic, minced
Preparation
- Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a 6-quart slow cooker until smooth. Add chicken, onion and garlic; stir to combine.
- Put the lid on and cook on low until the chicken can be pulled apart, about 5 hours.
- Transfer the chicken to a cutting board and shred with a fork. Return the chicken to the sauce, stir well and serve.

Tilapia with Bacon and Artichokes

SHOPPING LIST
4 slices thick-cut bacon, chopped
4 tilapia fillets
Kosher salt and black pepper
1 (10-ounce) jar marinated artichoke hearts, drained and quartered
2 tablespoons diced roasted red peppers
Juice of ½ a lemon
1 tablespoon chopped flat-leaf parsley
Directions
1. PLACE bacon in a large sauce pan over medium-high heat and cook until crisp. Remove from pan and set aside, leaving bacon grease in the pan.
2. REDUCE heat to medium, generously season tilapia fillets with salt and pepper, and place in pan. Let fillets sear for 3 minutes without moving them.
3. FLIP fillets and cook an additional minute before adding the cooked bacon, artichoke hearts, roasted red peppers, and lemon juice. Let cook until artichokes are warmed and fish easily flakes with a fork, 1 to 2 minutes.
4. Sprinkle with parsley before serving.
HELPFUL HINTS
Diced pancetta (Italian bacon) is even better than bacon in this recipe; though it can be a tough (and expensive) ingredient to find.
